I first became interested in cooking at sixteen after watching professional chefs on television. I originally wanted to become a Western-style chef, but my dream of owning my own restaurant led me to pursue sushi — and I’ve now been making sushi for nearly fifty years.
Having worked as a sushi chef overseas, I understand the preferences of international guests. While traveling, many people tend to overindulge in food, so instead of a full traditional course, I’ve created a more casual way to enjoy authentic Japanese sushi.
Our restaurant is small, with mainly counter seating, but I invite you to experience genuine Edomae-style sushi here in Tokyo. I look forward to welcoming you.

Located just 10 minutes from Shinjuku Station and 1 minute from Shinjuku-sanchome Station, Kaneshichi-Shoten Sushi Hiroki is a long-established Edomae sushi restaurant in the heart of Shinjuku.
Owner-chef Takasaki refined his skills at renowned restaurants across Japan and in Los Angeles before opening his own establishment in Tokyo. His Edomae-style nigiri sushi features rice seasoned with red vinegar, creating a perfect harmony with the carefully selected seasonal fish.

Chef Takasaki is committed to serving only the freshest, highest-quality ingredients of the season. Every element, from the carefully selected seafood to the perfectly seasoned sushi rice, is made with care to bring out its natural flavor.
Kaneshichi-Shoten Sushi Hiroki sources locally grown vegetables and selects wild, coastal fish whenever possible. The rice is cooked to the ideal texture to complement each topping, and every piece of sushi is shaped with precision to achieve the perfect balance between rice and fish.

・Please contact the restaurant directly if you expect to be late. If you arrive significantly past your reservation time, your reservation may be canceled, and a 100% cancellation fee will apply.
The restaurant asks that all guests within the same group select the same kaiseki dinner course. This is to ensure that all guests are able to enjoy each dish in its freshest state, and, as each dish is prepared one-by-one, everyone is able to savor the dinner together.
