For over 150 years, our restaurant has been a part of Kanazawa’s rich culinary tradition. As the sixth-generation owner, I was born into this legacy and have dedicated myself to preserving its history while welcoming new generations of guests.

While times change, our commitment to hospitality remains the same. We take the time to prepare each dish with care, creating a warm and relaxing space where you can truly enjoy your meal. My hope is that dining with us becomes more than just a meal—it’s an experience you’ll always remember.

About

Located just a 10-minute walk from Kanazawa Station, Ishiya is a long-established kappo restaurant founded in 1866. The restaurant seamlessly blends a traditional Japanese ambiance with modern comforts, creating a warm and inviting space.

One of its specialties is Kanazawa’s renowned Jibuni, a local dish so closely associated with the restaurant that it is often said, “When you think of Jibuni, you think of Ishiya.” Known beyond Kanazawa for its exceptional quality, this dish exemplifies the restaurant’s dedication to regional cuisine. Private rooms are available, making it an ideal setting for group gatherings and families with children.

Ishiya is committed to using only domestically sourced ingredients, carefully selecting high-quality, fresh produce to highlight the natural flavors of each component. Locally sourced whenever possible, the ingredients are chosen daily to ensure the best seasonal offerings at a reasonable price. Every dish is prepared with meticulous attention to detail—sashimi is sliced to order, and grilled items are seasoned only upon request. These time-honored techniques, passed down through generations, continue to define the restaurant’s culinary philosophy.
