A message from the Chef

I have inherited this fugu restaurant that was once owned and run by my grandfather. And we are in fact the very first restaurant in Kyoto city to be approved of safely handling & serving fugu (Japanese puffer fish) to customers. Although it may not be very common for people from other countries to eat fugu, in Japan it is very common, and Japan is one of the safest countries in which to eat fugu. We look forward to welcoming you to enjoy fugu as sashimi (tessa) and as hot pot (tecchiri)!

Specializes in serving fugu (Japanese pufferfish), this restaurant was established in 1919 during the Taisho era, and is known as the 1st restaurant in Kyoto to receive official government approval of serving fugu. Savor wild torafugu (tiger pufferfish), which has been carefully selected and purchased by the chef each morning, prepared in a variety of different ways: in a hotpot, as sashimi, grilled, and more. Enjoy your fugu alongside locally grown Kyoto vegetables!

What Does Fugu Taste Like?

Fugu, known as Japanese pufferfish, is considered a delicacy & luxury food ingredient in Japan. It is usually served in a hotpot, thinly sliced raw sashimi, grilled, or fried. Fugu is not a fatty fish, but is known to have a lot of umami flavor, and a plump yet delicate texture. When you order a kaiseki course, you will be served fugu in a variety of different ways so that you can enjoy the different textures and tastes!

 

Why is fugu considered a luxury ingredient?

The reason why fugu fish is considered a luxury ingredient is because it can only be enjoyed when prepared by a highly skilled & licensed fugu chef. The fugu chef must carefully cut the flesh of the fugu so that it is separated cleanly from the liver, skin, and ovaries to be safe to eat. You don’t need to worry, as the Japanese government has deemed fugu fish to be safe to enjoy when prepared by a licensed professional!
