A message from the Chef
Since 1905, my family has been serving sushi here in Hida Takayama. Although we are surrounded by mountains, we receive fresh seafood delivered directly from Toyama Bay every morning, allowing us to serve the freshest seasonal ingredients.
While I value the traditions that have been passed down through generations, I also enjoy exploring new ideas, such as creating sushi with Hida beef and other local ingredients.
One saying from the previous chef has always stayed with me: “The discovery of a new dish brings people more happiness than the discovery of a new star.” It reminds me to keep learning, creating, and sharing the joy of good food with every guest. About
Okimuraya Michiya Sushi is a long-established sushi restaurant in the heart of Hida Takayama, with a history dating back to 1905. Now led by its fourth-generation chef, the restaurant is just a five-minute walk from JR Takayama Station.
Although Takayama is surrounded by mountains, fresh seafood is delivered daily from both the Sea of Japan and the Pacific Ocean, including fish caught that very morning in Toyama Bay. This allows guests to enjoy fresh seafood at the restaurant despite its inland location.
In addition to traditional Edomae-style sushi prepared using techniques passed down through generations, Okimuraya Michiya Sushi serves local specialties such as Hida beef nigiri and its signature steamed sushi, which has been served since the restaurant first opened. Counter seating and private dining rooms provide a comfortable setting for all guests.

Cooking Philosophy
At Okimuraya Michiya Sushi, the chef carefully selects the best ingredients available each day and prepares every piece of sushi to bring out their natural flavors. From ingredient preparation to knife work, every step is carried out with precision and care.
Alongside traditional Edomae-style sushi, the restaurant also serves specialties unique to Hida Takayama, including Hida beef nigiri made with Hida wagyu and its signature steamed sushi (mushizushi), which has been served since the restaurant first opened in 1905.
Guests are invited to enjoy both the sushi and the historic atmosphere that have been part of the restaurant for more than a century.
