I take great pride in frying each piece of tempura right in front of my guests, ensuring it is served at its absolute best — piping hot and fresh. Tempura is a simple dish that brings out the natural flavors of the ingredients, which is why I focus on every detail, from selecting the finest produce to perfecting the frying technique and oil blend.
My goal is for my guests to experience not only the flavors of Japan, but also the charm of Kanazawa through tempura.
An intimate tempura specialty restaurant located in the Higashi Chaya District, Tempura Miyashita offers just eight counter seats, where guests can watch the chef at work and enjoy a dynamic, live cooking experience. Born in Ishikawa Prefecture in 1978, Chef Miyashita discovered his passion for cooking while working part-time in a restaurant. He decided to pursue a professional career in tempura, honing his skills at various establishments in Kanazawa, Tokyo, and Nagoya. In 2010, he opened Tempura Miyashita, focusing on locally sourced ingredients from Kanazawa and the Hokuriku region.
At Tempura Miyashita, the chef carefully selects the finest seasonal ingredients, frying them to perfection to bring out their natural flavors. Guests can also enjoy a curated selection of drinks, including both Japanese sake and wine, to complement the meal. The chef’s philosophy is simple: “Use local ingredients whenever possible” and “Provide attentive service,” ensuring a memorable dining experience.

Every morning, Chef Miyashita visits the market to personally choose fresh, local seafood and vegetables, focusing on quality and freshness. For the tempura frying oil, he carefully blends sesame oil and corn oil to achieve a delicate texture and the perfect balance of crispiness and fragrance. With counter seating, diners can savor freshly fried tempura as the chef ensures each piece is served at the ideal moment to maximize flavor.
