A message from the Chef
After training in Kyoto, I opened my restaurant here in Hida Takayama over ten years ago. Since then, I have remained committed to bringing out the natural flavors of the finest seasonal ingredients.
I carefully combine fresh seafood sourced from Toyama and Ishikawa with locally grown Hida ingredients to create dishes that reflect the changing seasons. Every meal is prepared with care, and my goal is for each guest to leave truly satisfied.

Just a short walk from Takayama’s historic Old Town, Shunshoku Mitsuyoshi is an intimate Japanese restaurant run by a chef who trained in Kyoto and a proprietress who is a certified sake sommelier (Kikisake-shi).
Drawing on his Kyoto training, the chef prepares refined seasonal Japanese cuisine using fresh seafood delivered from Toyama and Ishikawa alongside locally sourced Hida vegetables. From delicately prepared soup dishes infused with aromatic dashi to carefully grilled specialties and beautifully arranged hassun appetizers, each course reflects a deep respect for seasonal ingredients.
Complementing the cuisine, the proprietress thoughtfully introduces guests to a selection of regional sake, carefully chosen to pair with each meal.
