From a young age, I was surrounded by my grandmother’s home cooking, which naturally led me toward a career as a chef. After gaining experience as head chef with a major wedding company, I decided to open my own restaurant in February 2024.

Through training in French cuisine, sushi restaurants, and traditional Japanese cooking, I developed a style that values both Japanese and Western flavors. The heart of my cooking lies in creative courses that blend French techniques with elements of Japanese sushi.

My personal motto is simple: to bring a smile to every guest through food. By treating seasonal ingredients with care, I aim to create dishes that engage not only the palate, but also the aroma, appearance, and texture of each plate.

Opened in February 2024, Washoku French Shinjuku Matsu is a relatively new restaurant located in Shinjuku, Tokyo. Tucked away on the second floor of a newly built building in a quiet residential area of Nishi-Shinjuku, it offers a calm, hidden atmosphere away from the city’s bustle.

The intimate space features six counter seats and one table, making it suitable for couples, families, or small groups of friends. The chef prepares and serves each dish while observing the guests, creating a one-chef, personalized dining experience. The restaurant is a 6-minute walk from Seibu-Shinjuku Station and within walking distance of Shinjuku Station, making it an ideal setting for dates, anniversaries, or a relaxed yet refined evening meal.

Locally-Sourced Ingredients

The courses at Washoku French Shinjuku Matsu are built around an original concept that fuses French culinary techniques with Japanese sushi traditions. A meal may begin with seasonal seafood appetizers, followed by grilled meat as the main course, and conclude with sushi.

Ingredient selection is handled with great care, sourcing directly from producers as well as trusted wholesalers to secure the freshest seasonal fish and high-quality beef. Equal attention is given to presentation, with thoughtful use of tableware, color, and plating to express a sense of Japanese aesthetics and visual harmony.

A wide selection of wine and sake pairings is also available, allowing guests to enjoy how each drink complements the flavors of the cuisine.
