Have you heard of kushi-katsu? Many travelers are familiar with yakitori or tempura, but kushi-katsu is also a long-loved part of Japanese food culture. We take this traditionally casual dish of skewered meat and vegetables, lightly breaded and fried, and present it in an elevated setting paired with wine.
Although it may look simple, every element matters, from the ingredients, the batter, the breadcrumbs, and the oil. Each skewer is prepared by hand with care, resulting in a light, refined finish. I invite you to discover this lesser-known Japanese tradition and enjoy a new experience in kushi-katsu dining.
About
Tucked away quietly amid the bustle of Shinjuku, Tou is a hidden kushi-katsu and wine restaurant offering a refined yet relaxed dining experience. The retro-modern interior features a classic wooden counter and sleek black-accented table seating, creating an intimate atmosphere well suited for dates, business dinners, and special occasions.
The head chef trained in traditional kappo cuisine and later served as head chef at a five-star hotel in Tokyo, bringing expert technique to this seemingly simple style of cooking. Although kushi-katsu may look straightforward, the restaurant uses premium ingredients along with carefully selected batter and oil, resulting in a light, clean finish that highlights each ingredients’ natural flavor.
The restaurant also imports a wide range of wines directly, allowing guests to enjoy thoughtful pairings that complement the seasonal skewers. Originally renovated from a long-established jazz bar, the space retains a warm sense of character while offering a stylish, contemporary dining environment.

The kushi-katsu course changes monthly, allowing the restaurant to serve the most seasonal and flavorful ingredients throughout the year. Although fried dishes can seem heavy, the carefully selected batter and oil create a light, clean finish that guests can enjoy comfortably through the very last skewer.
At the counter, each kushi-katsu is fried right before the guests, offering both the lively atmosphere of the kitchen and the pleasure of enjoying every skewer at its most flavorful.
