A message from the Chef

I originally trained in traditional Japanese cuisine, but it was tempura that truly captured my interest. After opening my own restaurant in Kameari, I later relocated to Nezu, Tokyo.

This background is reflected in our course menus—not only do we serve tempura as the main feature, but also include seasonal Japanese dishes such as dashi-based soups and charcoal-grilled fish infused with subtle smoky aromas.

Located in the quiet, historic neighborhood of Nezu, near Ueno in Tokyo’s Taito City, Tempura Fukutarou is a reservation-only tempura restaurant specializing in elevated, seasonal Japanese cuisine.

Our focus is simple: to bring out the natural flavors of every ingredient using time-honored techniques. We take pride in sourcing the freshest seafood from Toyosu Market every morning and selecting crisp seasonal vegetables from trusted partner farms. Every detail—from the quality of our tempura batter to the oil temperature—is carefully managed to deliver a light, crisp bite that highlights each ingredient’s umami.

Locally-Sourced Ingredients

Seafood is delivered fresh each morning from Toyosu Market, and vegetables are sourced directly from contract farmers, ensuring each dish is crafted with seasonal Japanese produce. We use two types of sesame oil, selected based on the ingredient, to create tempura that is light, aromatic, and full of flavor.

Our batter is prepared with chilled cake flour and remade several times during each service to ensure optimal texture. Oil temperature and frying time are adjusted for each ingredient to draw out its natural umami.

We also take great care with our condiments—from our house-made tentsuyu broth (made from dried bonito, horse mackerel, and mackerel flakes) to original yuzu salt and Okinawan sea salt. Each course features traditional Japanese dishes beyond tempura, such as seasonal soups and charcoal-grilled items, all prepared using refined culinary techniques.
