For nearly 40 years, I have personally visited Toyosu Market every morning to handpick the seafood I use at my restaurant. While freshness is essential, I also value the art of aging fish to enhance its natural umami, ensuring every piece of sushi is served at its most flavorful.
My approach isn’t flashy – I focus on precision and hold a deep respect for each ingredients. Whether you’re a sushi lover or trying sushi for the first time, I’ll guide you gently through the experience so you can truly enjoy the essence of Japanese taste and hospitality. Eitaro Sushi is a traditional Edomae-style sushi restaurant located just steps from Ueno’s Shinobazu Pond in Tokyo.
The owner-chef, who has personally sourced seafood from Toyosu Market everyday for nearly 40 years, focuses on natural, wild-caught ingredients. Each piece of sushi is prepared with care, using aging techniques to bring out the deepest flavors of each fish.
