I’ve spent many years honing my skills in both traditional Japanese cuisine and sushi. At this restaurant, I hope guests will enjoy more than just Edomae-style sushi. We also serve kaiseki-style course dishes that reflect the beauty of Japan’s changing seasons.
One ingredient I particularly recommend is our hon-maguro (bluefin tuna), sourced from a trusted specialist at Tokyo’s Toyosu Market and aged to enhance its deep, natural flavor. With only ten counter seats, I prepare each dish myself and welcome every guest with sincere hospitality.
Tucked away in Tokyo’s Ueno neighborhood, Sushidokoro Isabiri is an intimate 10-seat sushi restaurant that combines the craftsmanship of Edomae sushi with the refined presentation of kaiseki-style Japanese cuisine.
With over 30 years of experience, the owner-chef prepares each dish with precision and care, using traditional techniques and highlighting the best seasonal ingredients. The restaurant’s signature hon-maguro (bluefin tuna) is sourced directly from a top Toyosu Market wholesaler and expertly aged in-house to enhance its deep, umami-rich flavor.
Guests are invited to enjoy a thoughtfully composed kaiseki course that celebrates the four seasons of Japan. While the cuisine is of the highest quality, the atmosphere remains warm and welcoming—making Isabiri a hidden gem cherished by both locals and travelers seeking an authentic Japanese dining experience in Tokyo.

Sushidokoro Isabiri, uses only the finest wild-caught seafood sourced from across Japan, with a special focus on quality, freshness, and seasonality. Some seafood is served fresh to preserve its delicate texture, while others are carefully aged to deepen their umami. The chef thoughtfully determines the best method for each item to bring out its peak flavor.
Seasonal ingredients are selected with precision, ensuring that only the best-tasting items of the moment are served. The restaurant sources directly from trusted producers and markets across Japan, with some seafood even flown in from Hokkaido and coastal fishing ports.
Guests can also enjoy sushi crafted with original red and white vinegar-blended shari (sushi rice), and paired with naturally brewed soy sauce from Yuasa—the birthplace of soy sauce in Japan. This attention to detail results in sushi that not only delights the palate but engages all the senses.
