A message from the Chef
After training at several restaurants, mainly in Kyoto, I returned to my hometown of Ishikawa and opened my own restaurant in 2026.
I grew up in a rice-farming family in the mountains, surrounded by nature from an early age. That experience continues to shape my cooking today. I bring together ingredients from both the mountains and the sea of Ishikawa, including seasonal items that are not often found in the market. Through these combinations, I hope each course offers something new to discover.
About
The cuisine at Yashusen focuses on local ingredients from Ishikawa’s mountains and sea, including Kaga yasai (traditional regional vegetables), shaped by over 20 years of experience in Japanese cooking. Each dish is prepared to bring out the natural flavor of the ingredients using careful, refined techniques.
Guests can choose between counter seating, where you can watch the chef preparing your kaiseki dinner, or a private room overlooking a quiet garden. The private rooms are suited for small groups and offer a calm setting for special occasions. This kaiseki dinner experience offers you a chance to enjoy the character of Ishikawa through each course.

Ingredients & Dining Philosophy
The menu at Yashusen follows the concept of shichijuni-ko (the 72 micro-seasons), reflecting subtle changes in nature throughout the year. Each course is designed to match a specific moment in the season.
Ingredients are sourced locally, including Kaga vegetables, wild mountain plants, fresh seafood, and occasionally game. These are prepared in a way that respects their natural qualities while applying thoughtful technique. From start to finish, the menu focuses on balance and seasonality, offering a detailed introduction of the locally-sourced ingredients and the region.
Drinks are selected to complement each dish, rather than simply accompany the meal. Sake pairings are available and chosen to match the character of each course, while wines are selected for how well they work with the cuisine rather than their origin. Shochu and Japanese whisky are also offered, focusing on distinct character and craftsmanship. Non-alcoholic options made with fruits, teas, and herbs are available, designed to pair naturally with the dishes.
