This 9-course Kanazawa kaiseki features seasonal ingredients from Ishikawa Prefecture alongside Noto wagyu beef served on a hot stone grill. The course follows the traditional flow of kaiseki dining, featuring a variety of seasonal dishes including sashimi, grilled dish, rice dish and more.
A message from the Chef
I grew up watching my father work in the kitchen of Kappo Matsuyoshi. After graduating from high school, I trained at restaurants in Kyoto and Osaka, where I learned the foundations of Japanese cuisine and developed my skills as a chef.
I later returned to Kanazawa and joined my family in continuing the tradition of Kappo Matsuyoshi. As the second-generation owner, I strive to preserve the flavors and hospitality that have long been part of the restaurant.
One of the things I enjoy most about traditional Japanese cuisine is working with the best ingredients available each day. By adapting to the seasons and selecting ingredients at their peak, I hope to share the traditions and seasonal flavors of Kanazawa city and Kappo Matsuyoshi.
About
Kappo Matsuyoshi is a traditional Japanese restaurant located in a relaxed neighborhood near the Sai River, just outside Kanazawa’s downtown district. The restaurant focuses on seasonal ingredients from the Hokuriku region, including fresh seafood and Kaga vegetables personally selected by the chef at the local market.
While rooted in the traditions of Kaga cuisine, the kaiseki courses also incorporate a modern touch, creating a dining experience that is approachable for both local and international guests.
Guests can enjoy the chef’s craftsmanship up close at the counter seats, while private rooms offer a more relaxed setting for family gatherings and special occasions. From the tableware to the interior details, the restaurant reflects the aesthetics and atmosphere of Kanazawa throughout the dining experience.
