A message from the Chef
I was born in Tohoku and trained in Edomae-style sushi in Tokyo before moving to Kyoto in search of a new challenge. In January 2025, I opened Sushi Imagine with the hope of creating a place where guests not only enjoy great sushi but also leave feeling truly moved by the experience.
For me, sushi is more than just food—it’s about creating a moment that stays with you. I put great care into every piece I make, thinking about how to bring out the best flavors and how to craft an atmosphere where guests can relax and enjoy their time. From the design of the space to the plates we serve on, every detail matters.

About
Located within walking distance of the bustling Shijo-Kawaramachi intersection, Sushi Imagine is an intimate 10-seat sushi restaurant that opened in January 2025. Housed in a beautifully renovated machiya (a traditional Japanese townhouse) over 100 years old, the restaurant offers a serene view of a classic courtyard, allowing guests to appreciate both the seasonal beauty of Kyoto and the artistry of their meal.
The restaurant specializes in Edomae-style sushi, a tradition that originated in Tokyo during the Edo period. This style emphasizes precise techniques such as aging, curing, and marinating to enhance the natural flavors of the seafood. Sushi Imagine stays true to this heritage by using akazu (red vinegar) sushi rice, a rarity in Kyoto, to bring out the depth and umami of each carefully selected ingredient.

At Sushi Imagine, you’ll experience an authentic omakase sushi course, thoughtfully curated by the chef to showcase the finest seasonal ingredients. The restaurant exclusively offers omakase, selecting the freshest seafood each day to ensure each piece is enjoyed at its peak.
Every detail is carefully considered, from the tableware to the beverages. Each dish is served on custom-made pieces crafted by local Kyoto artisans, adding to both the visual and culinary experience. A carefully curated selection of sake, shochu, and wine is also available, offering drinks to complement the flavors of the sushi.
