Sukiyaki & Shabu-Shabu Recommendations

Sukiyaki and shabu-shabu are two of Japan's most well-known hot pot dishes, both centered on thinly sliced, high-quality beef or pork, cooked right at the table.
Sukiyaki is simmered in a shallow iron pot with a sweet soy-based sauce and eaten dipped in raw beaten egg. Shabu-shabu is cooked in a light broth, with slices of meat briefly swished through a mild kombu dashi and served with a dipping sauce.
Kyoto is home to several long-established restaurants specialising in both styles, many of which use locally sourced Kyoto beef or premium Japanese wagyu beef. These are sit-down restaurants where the meal is prepared and served course by course, making them well-suited for a relaxed dinner. Restaurants below are located in central Kyoto.
