This 12-course Kanazawa kaiseki combines seasonal cuisine with the traditional crafts of Ishikawa Prefecture. The menu features regional specialties such as Wajima fugu, Noto tuna, Noto beef, Kaga lotus root, and sweetfish, prepared using a variety of traditional Japanese cooking techniques. As part of the experience, guests will also receive a pair of Wajima lacquer chopsticks to take home.

At CRAFEAT, we want guests to experience two things Ishikawa is proud of: its food culture and its traditional crafts.

Our dishes feature seasonal ingredients from Noto, Kaga, and across Ishikawa Prefecture, prepared with respect for tradition while also incorporating creativity and a sense of playfulness. The tableware used to serve each course is also an important part of the experience, with every piece carefully selected from Ishikawa’s traditional crafts, including Wajima lacquerware, Kutani ware, and Suzu ware.

By using these pieces throughout the meal, we hope guests can experience not only their beauty, but also the feel and craftsmanship that make them unique. Through food, tableware, and conversation, we invite guests to enjoy the culture of Ishikawa with all five senses.

About

CRAFEAT is a restaurant located in the bustling downtown area of Kanazawa. The restaurant’s name combines “craft” and “eat” and offers guests a unique dining experience. Operated by Taya Shikkiten, a long-established Wajima lacquerware company with nearly 200 years of history, the restaurant was created with the idea of bringing traditional crafts into everyday use.

The restaurant exclusively uses traditional tableware from Ishikawa Prefecture, including Wajima lacquerware, Kutani ware, Suzu ware, and Yamanaka lacquerware.

Rather than displaying crafts simply as decorative objects, CRAFEAT allows guests to experience them through daily use during the meal itself. Through the food, tableware, and atmosphere, the restaurant offers a new way to experience the culture and aesthetics of Ishikawa.

The cuisine features local ingredients such as Noto beef, nodoguro, and seasonal vegetables, prepared with a balance of traditional techniques and modern presentation.

Ingredients & Dining Philosophy

At CRAFEAT, the goal is to share the culture of Ishikawa through the dining table. Ingredients are carefully sourced from across the prefecture, and the chef sometimes harvests vegetables directly from local farms. The restaurant focuses on bringing out the character of each ingredient through unique preparation, such as nodoguro smoked with Kaga bocha tea, and Noto wagyu beef paired with local herbs.

Every dish is served using traditional crafts from Ishikawa, including Wajima lacquerware, Kutani ware, Suzu ware, and Yamanaka lacquerware. By actually using these pieces during the meal, guests can experience the texture, balance, and craftsmanship and take part in an immersive experience of Ishikawa’s culture and craftsmanship.
