I took over my family’s business in 2015, continuing the sushi restaurant my father established in Takayama City generations ago.
At our establishment, we use the traditional techniques of making Edo-style sushi. This means that we use methods such as ‘shimeru’ (vinegaring), ‘niru’ (simmering), ‘tsukeru’ (marinating), and ‘yaku’ (grilling) to bring out the flavors of each fish. While you may encounter sushi creations you’ve never seen before, we hope you’ll enjoy both the presentation and taste!
A sushi restaurant cherished by the local community for more than 50 years. This sushi restaurant prepares all of their sushi in the Edomae-style in order to bring out the best flavors of each ingredient.
The term “Edo-mae” originally referred to the sea (Tokyo Bay), which was rich in fish species. As you can imagine, during a time when there was no refrigeration, handling fresh fish posed a challenge. This is how the various techniques of Edomae Sushi was born. Techniques such as “shimeru” (vinegaring), “niru” (simmering), “tsukeru” (marinating), and “yaku” (grilling) were applied, enhancing the preservation and bringing forth the deliciousness of each fish.
With a relaxed atmosphere, this is a kaiseki sushi restaurant that can be enjoyed by couples, friends, groups, and families with children!

In addition to our their traditioinal Edo-style sushi, this sushi restaurant offers dishes made with fresh, locally sourced ingredients. The head chef also holds qualifications as a Japanese sake and Japanese shochu sommelier, so feel free to ask for any pairing recommendations!
