Located in Kanazawa’s historic Higashi Chaya Tea District, “Busaku” is a Japanese-French fusion restaurant that offers a unique dining experience that combines the charm of traditional Japanese culture with a modern culinary vision. Designed by a renowned Kyoto architect, the warm wooden interiors and soft lighting create a tranquil setting, ideal for enjoying the changing beauty of Japan’s four seasons. With over 20 years of experience in French cuisine, including serving as an executive chef at the Consulate General of Japan in Montreal, the head chef of “Busaku” returned to Kanazawa to open this restaurant in 2022. Inspired by his family’s soba restaurant roots and a passion for local traditions, he has crafted a dining experience that harmoniously blends Japanese and French influences.
