This sushi kaiseki menu features a variety of seasonal ingredients and fresh sushi, expertly prepared to highlight their natural flavors and textures. The dinner course includes 6–7 appetizers, 12 pieces of nigiri sushi, a comforting bowl of soup or chawanmushi, and a dessert to complete the experience.

For me, the sushi counter is where I feel most at home—it’s a space where I can truly express myself. Before becoming a sushi chef, I worked as a food scientist, a background that sets me apart from others in the industry. This unique experience allows me to approach sushi from both a scientific perspective and the traditions of Edomae-style sushi, giving my craft a distinctive edge.

About
Located just a short walk from Shijo Station, this intimate 9-seat sushi counter is tucked away near downtown area of Shijo-Karasuma in Kyoto. The head chef at Sushi Yuwa trained at renowned sushi establishments in Tokyo, honing the techniques of Edomae-style sushi, and later refined his skills at five-star hotels and Kyoto restaurants. With a background in research before becoming a chef, he brings an innovative touch to traditional sushi, crafting a unique dining experience that blends time-honored techniques with a fresh perspective.
They not only prioritize hospitality and comfort, but provide an atmosphere where every guest can fully relax and savor each bite as they watch the sushi being prepared right before their eyes.
