9-Course Japanese-Italian Kaiseki with Wagyu Sukiyaki & Seasonal Tempura

I opened Sumibi to Sake Shingetsu in December 2021 after spending two years preparing to start my own restaurant. Before opening Shingetsu, I worked in both Italian and Japanese cuisine, and here I bring those experiences together through creative charcoal-grilled dishes.

I am also a certified Japanese sake sommelier, so I personally choose a wide range of sake that I find interesting and enjoyable to drink myself. The selection changes regularly, and I always enjoy discovering new varieties.

More than anything, I wanted to create a relaxed place where people who love sake and food could gather, connect, and spend a comfortable time together. That feeling gradually became the foundation of this restaurant. This is my first time owning a restaurant, so every day brings new challenges and discoveries. I hope to keep improving and sharing enjoyable experiences with my customers.

Located just steps from Nijo Castle, Shingetsu is a restaurant where guests can enjoy sousaku ryori, or creative cuisine, that blends seasonal Japanese cooking with elements of Italian cuisine. The restaurant’s signature is its charcoal grilling (sumibiyaki), a technique that brings out the natural flavors of carefully selected seasonal ingredients while highlighting the character of each ingredient.

 

Chef Nakamura is also a certified sake sommelier, and the restaurant offers a wide selection of sake sourced from breweries across Japan. Alongside traditional labels, guests can also discover more unique varieties carefully chosen to pair with the cuisine. For guests who do not usually drink sake, Shingetsu also serves original yuzu highballs with a refreshing citrus aroma, as well as a range of wines and champagne inspired by the chef’s Italian culinary background.

 

Whether visiting for a relaxed evening with someone special or looking for a comforting place to unwind during a trip to Kyoto, Shingetsu offers a warm and memorable dining experience.

Carefully-Sourced Ingredients

At Shingetsu, care is taken not only in preparing each dish, but also in understanding where the ingredients come from and the people behind them.

The vegetables are seasonal organic produce sourced from partner farms, known for their vibrant colors and rich flavors that change throughout the year. Fresh seafood is sourced directly from Kyoto Central Market, while the meat selection includes lean wagyu beef as well as premium wild boar and venison from the Kyotango area.

These ingredients are then prepared using the restaurant’s signature charcoal-grilling technique. Different salts and olive oils are selected depending on the ingredient, while careful heat control helps seal in flavor and create a fragrant finish. As the ingredients change with the seasons, the dishes at Shingetsu also evolve regularly. Each meal is prepared to highlight the natural character, balance, and flavor of every ingredient served.
