A message from the Chef

I believe sushi is complete only when the fish and shari (sushi rice) are in harmony.
After training in Nagoya and Tokyo, I gained further experience running Akazu Kyo in Takayama’s Dekonaru Yokocho before opening Akazu. I carefully prepare each piece of sushi so that it can be enjoyed at its best. At the counter, I also value the conversations with guests and the atmosphere that naturally develops throughout the meal as part of the dining experience.
By working closely with ingredients at their seasonal best, I hope guests can discover different flavors with each visit. It is my pleasure to share both ingredients nurtured here in Hida and the traditions of Japanese sushi culture.
About
Sushi Akazu is a counter-style restaurant serving Edomae sushi in Hida Takayama. Chef Keiji Murakami opened the restaurant in 2025, drawing on his training in Nagoya and Tokyo as well as his experience at Akazu Kyo.
At the center of the restaurant’s sushi is shari prepared with red vinegar (akazu), from which the restaurant takes its name. Each piece is carefully prepared to balance the sushi rice with the fish, while the omakase menu features fresh seafood selected according to the day’s availability and season.
Guests can enjoy their meal at the counter while interacting with the chef throughout the course. The restaurant combines traditional Edomae sushi techniques with ingredients from Hida, bringing together Japanese sushi craftsmanship and the local food culture of Takayama.

Ingredients & Dining Philosophy
This sushi restaurant’s signature rice is prepared with a blend of two types of red vinegar and one type of black vinegar. The blend creates a balance of mellow flavor, depth, and moderate acidity that complements the sushi toppings.
Sushi Akazu selects its fresh fish daily, adjusting the knife work and preparation techniques to suit each ingredient. The chef also pays close attention to details such as the temperature of the ingredients and the amount of pressure used when shaping each piece of sushi.
Ingredients from Hida are incorporated according to the season, with a focus on bringing out their natural flavors through careful preparation and sushi-making techniques.
