For the past 30 years at Shishiou, my goal has remained the same: to make Japanese cuisine something guests can enjoy in a relaxed and approachable way.

Our style is kuzushi kaiseki. While we take a more casual approach to the traditional form of kaiseki, the techniques and values behind the cuisine remain unchanged. I want guests to enjoy the flavors of the season without feeling bound by formality.

Whether you are dining alone, as a couple, with family, or with friends, I hope you can take your time and enjoy the food and your time with us.

About

Kyoto-Style Kuzushi Kaiseki near Nijo Castle

Located near Nijo Castle in Kyoto, Shishiou has been serving Japanese cuisine for 30 years. The restaurant specializes in kuzushi kaiseki, a more casual and flexible approach to traditional kaiseki that retains the techniques and foundations of kaiseki and kappo cuisine while moving away from some of its formal conventions.

The owner-chef trained at a restaurant in Kyoto’s Gion district, where he further developed his skills as head chef. Drawing on this experience, he created Shishiou’s style of Kyoto kuzushi cuisine, allowing guests to experience traditional Kyoto cooking techniques in a more relaxed setting.

Seasonal Kyoto Cuisine & Original Japanese Sake

With 42 years of experience as a chef, the owner draws on the techniques of Kyoto cuisine he developed in Gion to prepare courses featuring seasonal ingredients, including Kyoto vegetables. The courses are designed for guests who prefer to enjoy a variety of dishes in smaller portions rather than a large meal.

Guests can choose counter seating, where they can watch the chef prepare dishes throughout the meal, or a private room with a traditional Japanese atmosphere for a quieter dining experience.

The restaurant also offers two original Japanese sake labels created to accompany its cuisine. Shishiou is a yamahai-jikomi honjozo sake, while Shishiwaka is a ginjo characterized by its aromatic profile. Each offers a different style of sake to enjoy alongside the restaurant’s cuisine.

What is Kuzushi Kaiseki?

Kuzushi kaiseki is a more relaxed style of the Japanese multi-course kaiseki dining. It preserves the traditional techniques and essence of kaiseki and kappo cuisine while loosening formal conventions, allowing guests to enjoy Japanese cuisine in a more casual and flexible way.

After training at a restaurant in Kyoto’s Gion district and honing his skills as head chef, the owner drew on his experience to create Shishiou’s own style of Kyo-kuzushi kaiseki cuisine.
