Traditional Shojin Ryori Kaiseki – 12-Course Buddhist Vegetarian Cuisine

After spending 20 years in Osaka and Kyoto refining my skills in Japanese cuisine, I decided to return to my hometown of Hida-Takayama. In 2013, I opened Mishin-an Hosho with the hope of creating a place that both locals and travelers could truly enjoy.

I prepare kaiseki courses that highlight both carefully sourced ingredients from Kanazawa and Shizuoka, as well as the fresh, seasonal produce of Hida Takayama region. My goal is to let each dish reflect the natural changes of the seasons.

I pay close attention to every detail, from the dishes to the paper place mats, so that the experience feels personal to each guest. For vegetarian guests, I also prepare special menus upon request. I look forward to welcoming you.

Located in the quiet neighborhood of Kamiokamoto-machi, just opposite Takayama Station from the bustling Old Town district, Mishin-an Hosho is a hidden retreat for Japanese cuisine.

This reservation-only restaurant offers a serene atmosphere where guests can enjoy seasonal kaiseki courses. Ingredients are sourced from Kanazawa and Shizuoka, as well as from the local markets of Hida-Takayama, bringing together both regional and seasonal flavors.

The dining room, constructed entirely of hinoki cypress, creates a warm and traditional ambiance. The restaurant also accommodates a variety of dietary needs, including vegan, vegetarian, halal, and gluten-free options

Atmosphere

The philosophy of Mishin-an Hosho is to offer hospitality tailored to each guest. Every detail, from the choice of serving dishes to the design of the chopstick sleeves, create an atmosphere where the beauty of the seasons can be felt in every element.

Meals are carefully designed to be enjoyed with all five senses, combining refined flavors with seasonal presentation. The restaurant’s flexible approach allows it to welcome guests from a wide range of cultural backgrounds and dining preferences.
