Takayama’s seasons are full of character. In spring, we gather mountain herbs; in summer, it’s river fish from clear streams. Autumn brings wild mushrooms, and in winter, we enjoy hearty game meat. These ingredients inspire the dishes I prepare each day.
At Sakana, I welcome just one group a day so I can give my full attention to each guest. Your experience begins at the counter with a seasonal course, then moves to Rakumian — a separate old-style house on the property with a traditional irori hearth. It’s like stepping into another time. On sunny days, we might grill over charcoal in the garden. In winter, you could be enjoying hotpot inside a snow kamakura.
I like to add a bit of playfulness to the experience, but always with care and respect for the season. If you’re looking for a truly local, memorable meal to share with someone special, I’d be honored to cook for you.
Tucked away in a quiet corner of Takayama, is an exclusive, reservation-only Japanese-style restaurant offering a fully private dining experience for just one group per day. From fresh mountain herbs and root vegetables to river fish and local sake, every ingredient is sourced from Takayama and the surrounding Hida region. The chef of restaurant Sakana personally crafts each dish based on what is freshest and most flavorful on the day of your visit.
But here, the setting is just as important as the food. Your experience begins with a counter-course meal before moving to Rakumian — a separate, traditional-style house on the property. Sit around the irori hearth as seasonal ingredients are grilled over charcoal. Depending on the time of year, you might find yourself dining by an outdoor stone garden, enjoying a hot pot inside a snow kamakura, or sipping dessert drinks back at the counter during a quiet bar-style finish.
