A message from the Chef
Inspired by my father, who was the original owner-chef of this restaurant, I decided to pursue a career in the culinary field to continue our family restaurant!
When you dine with us, you’ll always be served ‘Saba Sushi’ as the final dish. ‘Saba’ (mackerel) is actually a locally-loved dish that has a long history in Kyoto, and has been enjoyed since the Edo period (1603-1868). We hope you enjoy this sushi alongside other traditional Japanese dishes. We look forward to serving you!
About
Located along a stone-paved street, just a short walk from the famous Tatsumi Bridge of Kyoto city’s Gion-Shirakawa area. This kaiseki restaurant offers authentic Japanese cuisine using carefully selected seasonal Kyoto vegetables, fresh seafood, and more.
Each dish is prepared using ingredients that are the most flavorful according to each season. Their specialty sushi, saba-zushi (mackerel sushi), is very popular for its rich flavor & bite that comes from it’s vinegared taste. The sushi rice is made with yuzu (yuzu citrus) vinegar, which gives the sushi a rich aroma.
