A message from the Chef
For more than 40 years, my family has welcomed guests to our restaurant in Kyoto’s Tambaguchi area. I grew up watching my father, a chef, and my mother, who managed the restaurant, and later trained at Japanese restaurants in Kyoto before returning to continue our family’s tradition.
Each morning, I visit the market to select seasonal seafood and Kyoto vegetables, using them to express the flavors of the season in every dish. To me, Kyoto cuisine is about enjoying the ingredients of the region and the connections made around the table. Carefully-Sourced Ingredients
At Kyoryori Hachisei, the chef visits the nearby Kyoto Wholesale market each morning to personally select the freshest seafood and seasonal ingredients. The cuisine reflects the changing seasons, with an emphasis on Kyoto vegetables and other locally sourced produce.
The restaurant’s sukiyaki features Kameoka beef, a premium Japanese Black wagyu raised in Kameoka, Kyoto. Known for its fine marbling and delicate sweetness, it offers a rich yet balanced flavor.
In addition to the cuisine, careful attention is given to the choice of tableware and presentation so each dish can be appreciated visually as well as for its taste.
