With the idea of “hospitality through thoughtfully prepared dishes,” I personally select all the ingredients and create the daily menu using the finest ingredients of the day.

I also take great care in choosing the tableware, so I hope you can feel the four seasons of Japan through my cooking. I will do my utmost to make your time with us an unforgettable experience.

About

Nestled in the heart of Takayama city, Hanahouchou is a refined Takayama restaurant offering an authentic Japanese dining experience that celebrates the region’s rich culinary heritage. From mountain herbs and vegetables to fresh seafood and Hida wagyu beef, every dish reflects the beauty of Japan’s seasonal bounty.

The owner-chef began his culinary journey at just 16 years old. After earning his chef’s license, he trained at prestigious kaiseki restaurants in Kyoto and Osaka before returning to his hometown of Hida Takayama. There, he served as head chef at a local hotel before opening Hanahouchou in 2013 to bring his passion for traditional cuisine back home.

A Refined Atmosphere Overlooking Takayama Jinya

At Hanahouchou, you’ll enjoy more than just a meal—you’ll experience the true spirit of traditional food in Takayama. Guests dine at horigotatsu tables, which are low tables with sunken floor space underneath. This offers the authentic feel of sitting on tatami mats, while still allowing guests—especially those unaccustomed to floor seating—to sit comfortably with their legs extended. Private rooms are also available, making it a perfect setting for special occasions or group gatherings.

From delicately prepared sashimi and seasonal tempura to dishes like wagyu grilled on hot stones or vegetables simmered in dashi broth, each course in this kaiseki dinner is a celebration of craftsmanship and flavor.
