Since I was young, baseball taught me the spirit of ikkyu nyūkon (一球入魂), which means to put one’s whole heart into a single pitch. That same mindset guides me in the kitchen, where I approach each dish with complete dedication.

Here in Kyoto’s historic Nishijin district, I hope to create something special for every guest by preparing seasonal ingredients with care and intention. Through my cooking, I would be delighted if you could feel both the quiet beauty of Kyoto and a sense of gentle surprise.

Located in a quiet corner of Kyoto’s Nishijin district, Nishijin Hashimoto is a kappo-style restaurant with only nine counter seats, offering an intimate, hidden retreat from the city. Passing through its traditional noren, guests enter a warm wooden interior where soft lighting and natural materials create a calm, inviting atmosphere where guests can  while savoring authentic Kyoto cuisine.

From the counter, guests can watch the chef’s precise techniques up close, experiencing each dish with all five senses while enjoying conversations with the chef. The restaurant is well suited for a wide range of occasions, from business dinners and celebrations to dates or meals with friends, all supported by attentive and heartfelt hospitality.

Ingredients & Dining Philosophy

Nishijin Hashimoto is committed to using seasonal ingredients at their peak, selected personally each morning by the chef. Only the finest products are chosen, including exceptional specialties such as Taiza crab and high-grade kue fish. These carefully sourced ingredients are transformed into refined dishes that express the beauty and transitions of the Japanese seasons.

Dishes feature delicate touches such as pairing silky sesame tofu with seasonal vegetable purées, reflecting a balance of tradition and creativity of classic Kyoto kappo cuisine. The chef also prepares sushi and soba by hand, offering guests a wider range of Japanese flavors within an intimate counter setting. Each plate is prepared with careful attention to heat, seasoning, and presentation, resulting in cuisine that is both delicate and memorable.

A curated selection of beverages is available, including seasonal sake and shōchū from across Japan, along with wines chosen to complement Japanese cuisine. Guests are invited to savor these pairings as part of a relaxed yet refined dining experience.

・Please contact the restaurant directly if you expect to be late. If you arrive significantly past your reservation time, your reservation may be canceled, and a 100% cancellation fee will apply.

 

The restaurant asks that all guests within the same group select the same kaiseki dinner course. This is to ensure that all guests are able to enjoy each dish in its freshest state, and, as each dish is prepared one-by-one, everyone is able to savor the dinner together.
