A message from the Chef
At barrier, we center our cooking around dashi, a traditional Japanese stock made from ingredients such as kombu (kelp) and katsuobushi (dried bonito flakes), known for its clean, umami-rich flavor. Carefully prepared first dashi is poured using a siphon right in front of you, allowing you to experience its aroma and flavor in that moment.
While we use traditional serving dishware, we also take a modern approach to presentation. The dashi itself plays a central role throughout the meal, bringing the dishes together and leaving a lasting impression. Within this space, inspired by the idea of a “barrier,” we invite you to spend time where contrasts such as light and shadow, past and present, come together.
About
barrier is a creative Japanese restaurant located near the historic Higashi Chaya District in Kanazawa, and just steps from the Asanogawa Ohashi Bridge. Set in a renovated traditional machiya townhouse, barrier offers a kaiseki dining experience built around a concept centered on dashi stock.
The interior of the machiya is designed around the idea of a “barrier,” creating a clear separation from the surrounding city. Inside, the setting is kept almost completely dark, with focused lighting that highlights each moment. This contrast between light and shadow, old and new, creates a quiet, immersive atmosphere that feels removed from everyday life.

Appetizer – Sea bream cured with kombu, served with two seasonal delicacies
3 Signature Dashi Bowls – Abalone and seasonal vegetables in a dobin-mushi style broth – Crab shinjo (soft dumpling) with yuba (tofu skin) – Noto beef prepared in a sukiyaki-style broth
Oshizushi – Pressed Sushi (3 Types) – Salmon with salmon roe – Snow crab with crab miso – Lightly seared Noto beef cured with kombu, served with yuzu kosho
Ramen to Finish – Grilled Nagoya Cochin chicken with porcini and truffle-infused soy sauce ramen
Dessert – Matcha ice cream with kinako and brown sugar syrup, inspired by traditional anmitsu dessert
Drink – Choice of Japanese sake or soft drink

Ingredients & Dining Philosophy
At barrier, the menu is built around dashi, a traditional Japanese stock made from ingredients such as kombu (kelp) and katsuobushi (dried bonito flakes). Each serving of first dashi is carefully prepared using a siphon and poured at the table, bringing out its aroma and depth.
The meal is presented using traditional elements such as sanbo trays and okamochi boxes, while taking a contemporary approach to how dishes are served. Each course is designed to pair with the dashi, bringing out the natural qualities of the ingredients. Rather than bold or heavy flavors, the focus is on balance and depth, allowing the flavor and aroma of dashi to shape the overall experience.
