A message from the Chef

Founded at the end of the Edo period, about 200 years ago, I am the 12th owner of this ‘shojin ryori’ restaurant. The kaiseki meals that we offer are all vegetarian cuisine, which we have been adhering to since the establishment of the restaurant.

You may think, “Isn’t ‘Shojin Ryori’ something monks eat when you go to a temple for ascetic training?” However, our restaurant is a little different. So we hope that you are able to satisfy your heart and stomach with dishes that are rich in Hida Takayama’s local delicacies & over 200 years of history.

About

Founded at the end of the Edo period (around 1818-1829), this restaurant has over 200 years of history and is considered to be the oldest ryotei restaurant in Gifu Prefecture. Not only is the restaurant’s architecture & garden beautiful to admire and full of history, both have been designated as cultural assets by Takayama City.

In addition to the main hall, there is a tea ceremony room and a detached tatami room in the garden. Enjoy a delicate kaiseki dinner while admiring the garden and room arrangements in a tranquil atmosphere.

What is 'Shojin Ryori'?

‘Shojin Ryori’ is a traditional Japanese Buddhist vegetarian cuisine that is not only colorful, but is packed with seasonal ingredients. Each dish is prepared using traditional cooking methods to bring out the umami of each ingredient, and focuses on creating dishes represent 5 different tastes: sweet, sour, salty, bitter, and umami. You don’t need to be a vegetarian to enjoy shojin ryori!

 

The ‘shojin ryori’ cuisine served at this restaurant is considered to be “slow food”. “Slow food” refers to the idea of valuing the traditional ingredients and cooking methods of the land and preserving the diversity of food and flavors from the past.There are even “super-slow food” dishes served here, which may take up to an entire year to prepare!
