I first started my career as a chef in French cuisine. I then trained at the Sushi Nakamura restaurant in Tokyo city for 6 years before opening a branch in Kyoto city, my hometown, as the head chef in 2022.

Enjoy an authentic edomae sushi kaiseki course, featuring fresh, local fish unique to Kyoto, along with seafood from the Toyosu Market in Tokyo. When you think “sushi,” you most likely imagine the edomae sushi style. Originating in Tokyo city (formerly known as Edo), these are bite-size pieces of fish placed on top of vinegared rice.
This sushi restaurant overlooks the Gion Shirakawa River in the historical Gion neighborhood, allowing you to admire the seasons of Kyoto while enjoying an exquisite sushi dinner. There are only 10 counter seats available at this restaurant.

Each morning, the chef carefully selects fresh seafood from the local fish market to ensure each customer can enjoy the best of the best. The sushi rice is made from Niigata Prefecture’s Koshihikari rice, which is cooked in an iron kettle and blended with three kinds of red vinegar and rice vinegar to give it the perfect texture & flavor.
The chef also takes care to use a traditional cooking technique known as ‘kakushi bocho’ (lightly scoring the surface of ingredients) when preparing each sushi. This technique not only makes each ingredient easier to eat, but it creates a harmonious sushi experience, too.
