Enjoy a 10-course sushi kaiseki combining traditional Japanese dishes with fresh nigiri sushi. The course features wagyu beef and seasonal vegetables, three kinds of tempura including kuruma prawn, and 6 pieces of chef-selected nigiri sushi. Fresh sashimi, a grilled dish, warm seasonal dishes, and fruit complete the course.

I begin each day by selecting ingredients at their best for the season. I personally choose fresh fish and vegetables at the market and carefully prepare each ingredient to bring out its natural flavor.

Alongside sushi, I incorporate techniques from traditional Japanese cuisine to create dishes that reflect the changing seasons. I also hope guests enjoy watching each dish come together across the counter as part of the dining experience.

Through each course, I aim to share Japan’s four seasons and delicate flavors through all five senses, creating a meal that becomes part of your memories of Japan.

Sushi & Kaiseki near Nishi Honganji Temple in Kyoto

Located near Nishi Honganji Temple, Kyoto Sushi Ichi is a sushi and kaiseki restaurant serving courses that bring together sushi and traditional Japanese cuisine. Fresh seafood and other ingredients are selected by the chef and prepared according to their condition and the season.

The restaurant incorporates Nishijin textiles and traditional plaster walls into its Japanese-style interior. At the counter, guests can watch the chef prepare each piece of sushi and dish throughout the course.

By combining sushi with techniques from Japanese kaiseki cuisine, Kyoto Sushi Ichi offers a dining experience centered around carefully selected ingredients and the changing seasons in Kyoto.

Fresh Seafood & Seasonal Kaiseki Techniques

Each morning, the chef selects fresh fish and vegetables at the market, choosing ingredients according to their quality and season. Preparation and cooking techniques are adjusted to suit each ingredient and bring out its natural flavor.

In addition to sushi, the restaurant incorporates techniques from kaiseki cuisine to express seasonality throughout the course. Dishes reflect the Japanese concepts of hashiri (the beginning of a season), shun (ingredients at their seasonal peak), and nagori (the end of a season).

From individual pieces of sushi to prepared dishes and sweets, the restaurant focuses on careful technique and the natural characteristics of each ingredient.
