A message from the Chef
I have always loved both cooking and eating, which naturally led me to become a chef. After honing my skills in hotels, ryokan, and izakaya, I opened Nono Hana here in Takayama. My goal is to showcase the flavors of the region through seasonal dishes made with locally sourced ingredients, as well as handcrafted soba prepared with the utmost care.
In addition to cooking, I also practice pottery, and some of the dishes are served on my own handmade ceramics. Through food and hospitality, I hope to share the charm of Takayama with every guest who visits. We also offer a carefully curated selection of sake—please come and enjoy a truly special dining experience.

Located a short walk from Takayama Station, Nonohana is a Japanese restaurant specializing in handcrafted soba and premium local sake. The restaurant is housed in a beautifully preserved wooden building that is over 100 years old, offering both counter seating for an intimate dining experience and traditional tatami rooms where families and friends can relax together.

Handcrafted Soba Noodles
Our signature soba is made from a blend of three types of buckwheat flour, kneaded and hand-cut using the pure natural spring water of Okuhida. The dashi broth is prepared with premium Hidaka kombu and the finest thick-cut bonito flakes, ensuring a deep, refined flavor.
The seafood used in our sashimi and other dishes is delivered fresh from Toyama, allowing us to serve an exceptional selection of fish despite being surrounded by mountains. We also offer an extensive selection of sake, primarily from Gifu Prefecture, carefully chosen to complement each dish.
