A message from the Chef

After many years running Japanese restaurants abroad, I was drawn to the natural beauty of Takayama and decided to settle here, opening this teppanyaki restaurant. With over 30 years of experience dedicated to Japanese cuisine, my approach to teppanyaki is deeply rooted in tradition while ensuring that guests from all over the world can enjoy and appreciate the flavors.

Takayama is a place I love, and through each meal I serve, I hope to share that passion with my guests—so that when they leave, they take a piece of Takayama with them.

About

Located in a tranquil area, this intimate Japanese teppanyaki restaurant offers a refined dining experience.

Chef Tanaka trained at a long-established kappo restaurant in Osaka before spending years running Japanese restaurants in Berlin, Germany, and Sicily, Italy. Upon returning to Japan, he was captivated by the beauty of Takayama and chose this location to open an exclusive teppanyaki restaurant, welcoming only 2 groups per day.

The restaurant specializes in carefully selected A5-grade Hida wagyu beef, complemented by the finest local ingredients. From the counter seats, guests can watch the chef’s expert techniques up close while enjoying a view of the beautifully landscaped garden—reminiscent of a traditional Japanese setting that changes with the seasons. For those looking to escape the bustle of the city and enjoy a truly special dining experience in a serene atmosphere, this restaurant offers the perfect setting.

What is Teppanyaki?

Teppanyaki is a Japanese cooking style where ingredients are grilled on a large, hot iron griddle, known as a teppan. The word “teppanyaki” comes from teppan (iron plate) and yaki (grilled or pan-fried). One of the highlights of a teppanyaki meal is the immersive experience—watching the chef skillfully prepare each dish right before your eyes.

This technique is perfect for showcasing premium ingredients like Hida Wagyu beef. The high heat of the teppan creates a beautifully seared crust while locking in the beef’s natural juices, enhancing its rich umami flavor and keeping it tender. Teppanyaki is one of the finest ways to experience the exceptional quality of A5-grade Hida beef.
